 - 2 tbsp vinegar
 - 1 tbsp cornstarch

Sauce Ingredients
- 3 tbsp soy sauce
 - 1 tbsp oyster sauce
 - 1 tbsp rice wine
 - 2 tbsp sugar
 - A pinch of pepper
 
ШАГИ
Cut potatoes, eggplant, red bell pepper, shiitake mushrooms, and onion into bite-sized pieces. Slice green onion into similar sizes.
Season potatoes and eggplant with salt and pepper.
Coat potatoes, eggplant, and shiitake mushrooms evenly with cornstarch.
Deep-fry potatoes, eggplant, and shiitake mushrooms in preheated oil until golden brown.
Heat oil in a pan and sauté green onion, minced garlic, and dried chilies. Add fried ingredients and red bell pepper, then stir-fry.
Add sauce ingredients and stir-fry. Finish by adding vinegar and lightly stir before serving.
