INGREDIENTS
Vegetables
- 1 bamboo shoot (300g), boiled
- 50g wakame, cut into pieces
Seasonings
- 1 tbsp sake
- 2 tbsp mirin
- 2 tbsp light soy sauce
- 1 pinch dashi powder
Liquid
- 200cc water
Garnish
- Kinome (Japanese herb), as needed
STEPS
Cut the bamboo shoot: slice the tip into bite-sized pieces, halve the remaining part lengthwise, and cut into 5mm thick half-moon slices. Prepare wakame by cutting it into bite-sized pieces.
In a pot, combine sake, mirin, light soy sauce, dashi powder, water, and bamboo shoot. Heat until boiling, then cover with a drop lid and regular lid. Simmer on low heat for 15 minutes.
Add wakame to the pot and simmer for 2–3 minutes. Let cool slightly, then serve in a dish with kinome as garnish.
