INGREDIENTS
Meat
- 150g thinly sliced pork belly
Vegetables
- 🍆 3 medium eggplants (240g)
- 🥒 1/2 zucchini (85g)
Oil and Seasoning
- 1/2 tbsp salad oil
- đź§‚ Pinch of salt and pepper
Sauces and Condiments
- 1 tbsp sake
- 🍬 1 tsp sugar
- 1/2 tbsp vinegar
- 1 tbsp fish sauce
- đź§‚ Pinch of pepper
STEPS
Cut the zucchini into 1cm slices and the eggplants into bite-sized pieces.
Slice the pork belly into 3cm pieces and season with salt and pepper.
Heat salad oil in a frying pan over medium heat, add pork, and stir-fry until the color changes. Add eggplants and stir-fry until coated with oil. Add 1 tbsp of water, cover, and steam on low heat for 2-3 minutes.
Add zucchini and stir-fry over medium heat until combined. Add the sauce ingredients and stir-fry until evenly coated.
