    • 2 frozen udon noodles
    • 1 can tuna in oil (70g)
    • 🍆 2 eggplants (160g)
    • 5 shiso leaves
    • A pinch of white sesame seeds
  • Plum Sauce

    • 1 plum, pitted and chopped
    • 1 tsp grated ginger
    • 2 tbsp concentrated soy sauce
    • 6 tbsp water

Cut the eggplant in half lengthwise, soak in water, and wrap in plastic wrap. Microwave at 600W for 3 minutes, then cool in cold water. Tear into bite-sized pieces. Slice shiso leaves thinly. Pit and chop the plum.

Mix the plum sauce ingredients (plum, ginger, soy sauce, water) in a bowl. In another bowl, combine the tuna and eggplant.

Microwave the frozen udon noodles according to package instructions. Rinse under cold water and drain.

Plate the udon noodles, top with the tuna and eggplant mixture, drizzle with plum sauce, and garnish with shiso leaves and sesame seeds.
