Trim the roots off the pea shoots and cut them in half. Slice the ham into 1cm wide strips.

Boil water in a pot and cook the vermicelli according to package instructions. Drain and cut into manageable lengths.

In a bowl, mix the seasoning ingredients (sugar, vinegar, soy sauce, sesame oil, chicken broth powder). Add the pea shoots and vermicelli, then mix. Add the ham and sesame seeds, and gently combine.
