INGREDIENTS
Main Ingredients
- 1 piece hanpen (60g)
- 80g grated lotus root
- 1 tbsp potato starch
- đź§‚ A pinch of salt
Seasoning
- 1 tsp sake
- đź§‚ A pinch of salt
- 1 tsp soy sauce
- 1/3 tsp dashi powder
- đź’§ 300ml water
Garnish
- A small amount of mitsuba
STEPS
Grate the lotus root and lightly squeeze out excess water.
In a bowl, combine grated lotus root, hanpen, potato starch, and salt. Mash the hanpen while mixing. Divide into 6 portions and shape into balls to make lotus root dumplings.
In a pot, add all the seasoning ingredients (sake, salt, soy sauce, dashi powder, and water) and bring to a boil over medium heat. Add the lotus root dumplings and simmer on low heat for about 3 minutes until they float.
Serve the soup in bowls and garnish with mitsuba.
