INGREDIENTS
Main Ingredients
- 🥚 2 eggs, beaten
- 200g komatsuna, chopped
- 30g dried shirasu
- 1 tbsp salad oil
Seasoning
- 1 tbsp sake
- 1/2 tbsp mirin
- 🍬 1/2 tsp sugar
- 1/2 tbsp soy sauce
STEPS
Cut the roots off the komatsuna and chop into bite-sized pieces.
Mix the seasoning ingredients (sake, mirin, sugar, soy sauce) in a bowl.
Heat salad oil in a frying pan over medium heat, pour in the beaten eggs, and stir-fry until semi-cooked. Remove the eggs from the pan.
Using the same pan, stir-fry the komatsuna until softened. Add the eggs back into the pan along with the dried shirasu, breaking them apart as you stir-fry.
Pour the mixed seasoning into the pan and stir-fry everything together until well combined.
