Separate the chrysanthemum greens into leaves and stems. Thinly slice the stems diagonally.

In a bowl, mix all the sauce ingredients (soy sauce, honey, grated garlic, and grated ginger).

Heat sesame oil in a frying pan over medium heat. Add the beef and chrysanthemum stems, and stir-fry until the beef changes color. Lightly season with salt and pepper.

Add the stir-fried mixture to the bowl of sauce and mix well.

Serve warm rice in a bowl. Top with the beef mixture, chrysanthemum leaves, and an onsen egg. Sprinkle with white sesame seeds. Repeat for the second serving.
