Cut chrysanthemum greens into bite-sized pieces. Cut chicken thigh into bite-sized pieces.

Boil water in a pot, add shirataki noodles, blanch briefly, drain, and cut into bite-sized pieces.

Mix the sauce ingredients (mirin, sugar, soy sauce, and water) in a bowl.

Heat salad oil in a frying pan over medium heat. Place chicken thigh skin-side down and cook until browned. Flip the chicken, add shirataki noodles, and cook for 2–3 minutes over medium-low heat.

Add the prepared sauce to the pan. Simmer until the sauce thickens slightly, then add chrysanthemum greens and stir-fry until wilted.
