INGREDIENTS

- 🐚 250g clams
Alcohol
- 100cc sake
Rice
- 🍚 2 bowls cooked rice
Herbs
- To taste kinome leaves

- To taste sansho powder
Seasoning
- 🧂 2 tbsp soy sauce
- 1 tbsp mirin
- 1 tbsp sake
- 🍬 1 tsp sugar
- 1/2 piece sliced ginger
STEPS
Place clams and sake in a pot, cover, and heat over medium heat until the clams open. Remove the clam meat and strain the steaming liquid.
In the same pot, add the clam meat, seasoning ingredients, and the strained steaming liquid. Boil over high heat for 1–2 minutes to reduce.
Mix the reduced clam mixture into the cooked rice, serve in bowls, and garnish with kinome leaves and sansho powder.
