INGREDIENTS
Rice
- 🍚 2 cups washed rice
Seafood
- 🦪 200g clams
Vegetables
- đź§… 1/2 onion, minced
- 🍅 6 cherry tomatoes, halved and deseeded
- đź§„ 1 clove garlic, minced
Condiments
- 1 tbsp olive oil
- 4 tbsp white wine
- Water as needed
- 🌿 Chopped parsley as needed
Seasonings
- 1 tsp consomme
- đź§‚ 1/2 tsp salt
- Pinch of pepper
- 1/2 tbsp curry powder
STEPS
Mince the onion and garlic. Halve and deseed the cherry tomatoes.
Heat olive oil and garlic in a pan over low heat until fragrant. Add onion and sauté until translucent. Add clams and white wine, cover, and steam over medium-low heat for 4–5 minutes until clams open. Separate clams from the steaming liquid.
In a rice cooker, combine washed rice, clam steaming liquid, seasonings, and water up to 2mm below the 2-cup mark. Cook as usual.
Once cooked, add clams and cherry tomatoes to the rice and gently mix.
Serve the pilaf on plates and garnish with chopped parsley.
