Anchovy Potato Salad

    • 🥔 2 potatoes
    • 🥕 1/4 carrot
  • Protein

    • 🥚 1 boiled egg
    • 1 anchovy
  • Condiments

    • 1 tbsp mayonnaise
    • đź§‚ 1/4 tsp salt
    • Pinch of pepper
  • Garnish

    • Pinch of dried parsley

    • 3 black olives

STEPS

Cut the potatoes into small pieces and soak them in water. Dice the carrot and boiled egg into 1cm cubes. Slice the black olives into thirds and finely chop the anchovy.

Place the potatoes and lightly wrapped carrot in a microwave-safe container. Cover loosely with plastic wrap and microwave at 600W for 6 minutes.

Remove the carrot and mash the potatoes while hot. Add salt and pepper, and mix well.

Once cooled, add the carrot, boiled egg, black olives, anchovy, and mayonnaise. Mix thoroughly.

Serve on a plate and sprinkle with dried parsley.
