    • 1 head napa cabbage
    • 🧂 1/2 cup coarse salt
  • Flour Paste

    • 1 tbsp flour
    • 💧 1 cup water
  • Kimchi Seasoning

    • 1/2 cup red pepper powder
    • 1/4 cup fish sauce
    • 🧄 2 tbsp minced garlic
    • 🍬 1 tbsp sugar
    • 1 tbsp plum extract
    • appropriate amount of flour paste

Cut the napa cabbage into quarters and soak in water for 20 minutes. Rinse thoroughly.

Sprinkle coarse salt between the layers of the cabbage. Add water to cover 1/3 of the cabbage and let it sit for 1 hour, flipping every 30 minutes.

Rinse the cabbage three times and squeeze out excess water. Set aside.

Prepare the flour paste by mixing 1 tbsp flour and 1 cup water in a pan. Heat on low until slightly transparent, then cool.

Mix the kimchi seasoning ingredients: red pepper powder, fish sauce, minced garlic, sugar, plum extract, and flour paste.

Spread the kimchi seasoning evenly between the layers of the cabbage.

Place the seasoned cabbage into a container. Store in the fridge and enjoy fresh kimchi as needed.
