  • Seasonings

    • 🧅 2 tbsp chopped green onion
    • 1 tbsp soy sauce
    • 🧄 1/2 tbsp minced garlic
    • 2/3 tbsp perilla oil
    • 2/3 tbsp sesame oil
    • 1.5 tbsp ground sesame seeds
    • 🧂 1/3–1/2 tbsp fine salt

Trim the spinach by removing yellow leaves and cutting off the root tips. Wash the spinach thoroughly 2–3 times and drain the water.

Boil water in a pot with a pinch of coarse salt. Once boiling, blanch the spinach for 10 seconds or less, depending on thickness. Immediately rinse in cold water twice and drain.

Squeeze the spinach firmly to remove excess water. Spread it on a cutting board, loosen the leaves, and chop into bite-sized pieces.

In a bowl, mix the chopped spinach with soy sauce, green onion, ground sesame seeds, perilla oil, sesame oil, minced garlic, and fine salt. Adjust salt to taste.
