INGREDIENTES
Main Ingredients
- 🧈 1 block tofu
- 🧅 1/2 onion, sliced
- 🧄 1/2 stalk green onion, sliced
- 500ml anchovy stock
Seasoning Sauce
- 3 tbsp chili powder
- 🧂 3 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tbsp cooking wine
- 🧄 1/2 tbsp minced garlic
- to taste shrimp paste
- 🍬 1 tbsp sugar
PASSOS
Prepare anchovy stock using dried anchovies or a stock pack. Use 500ml if adding noodles, or 400ml otherwise.
Slice the onion into 0.5cm thick pieces and cut the green onion into diagonal slices.
Cut the tofu into 1–1.5cm thick slices.
Mix soy sauce, chili powder, fish sauce, sugar, cooking wine, and minced garlic to create the seasoning sauce.
Layer sliced onions at the bottom of a pot or pan.
Place the tofu slices neatly on top of the onions.
Pour 400ml of prepared anchovy stock over the tofu.
Add the prepared seasoning sauce to the pot.
Simmer on medium heat until the stock begins to boil. Occasionally spoon the stock over the tofu to enhance flavor absorption.
Taste and adjust the seasoning with shrimp paste if needed.
Once the tofu absorbs the sauce and the stock reduces, add sliced green onions on top and serve.
If adding noodles, pour an additional 100ml of stock and cook the noodles in the pot.
