Soy Sauce Braised Chicken

    • 🍗 950g chicken for frying
    • 🧅 5-6 scallions
    • 3 green chilies
    • 3 red chilies
  • Seasoning

    • 🧂 5 tbsp soy sauce
    • 2 tbsp oyster sauce
    • 🧄 2 tbsp minced garlic
    • 100ml cooking wine
    • 🍬 2 tbsp brown sugar
    • 3 tbsp corn syrup
    • A pinch of ginger
    • 2 tbsp sesame oil
    • A pinch of sesame seeds
    • 💧 50ml water

Prepare the chicken by removing any leftover innards and excess fat. Make slits in the drumsticks for even cooking.

Rinse the chicken and pour hot water over it to blanch. Drain and pat dry with a kitchen towel.

Chop the scallions and chilies into small pieces.

Mix all seasoning ingredients except sesame oil and sesame seeds to create the sauce.

Heat a pan with a little cooking oil over medium heat. Place the chicken skin-side down and cook until golden brown.

Flip the chicken and cook evenly on both sides. Remove excess oil from the pan using a kitchen towel.

Pour the soy sauce mixture into the pan and cook on high heat until the sauce thickens.

Add chopped chilies and stir-fry briefly. Turn off the heat and mix in sesame oil and scallions.
