Chop green onion, onion, zucchini, and chili peppers into bite-sized pieces.
Heat 1 tbsp vegetable oil and 1 tbsp sesame oil in a pot over low heat. Add chopped green onion and sauté until fragrant.
Add 5 tbsp ground pork and 2 tbsp cooking wine to the pot. Stir-fry to remove any odor from the pork.
Add 1 tbsp minced garlic and 1 tbsp soy sauce. Continue stir-frying over low heat.
Add chopped onion and cook until the pork is mostly done.
Turn off the heat and add 3-4 tbsp red pepper powder. Stir to combine.
Turn the heat back on and add water to fill half the pot. Bring to a boil.
Add 1 tbsp fermented shrimp and simmer until flavors meld. Adjust seasoning with more fermented shrimp if needed.
Add zucchini and chili peppers. Sprinkle 3 dashes of black pepper.
Cut the soft tofu into thirds and gently add to the pot. Simmer until heated through.
