Slice the potato into thin strips as evenly as possible.

Boil water in a pot and blanch the potato slices for 4 minutes and 30 seconds over medium heat.
Cool the blanched potatoes under cold water; they don't need to be fully cooked yet.
Drain the potatoes again to remove excess water.
Slice the carrot and onion into thin strips while the potatoes are draining.
Heat a frying pan over low heat and add 2 tsp olive oil. Stir-fry the carrot and onion.
When the carrot and onion are almost cooked, add the potato slices.
Stir-fry everything evenly until the potatoes are tender and well-cooked.
