    • 🥒 1/3 zucchini, sliced

  • Anchovy Broth

    • 💧 2 liters water
    • 1 handful dried anchovies
  • Seasoning

    • 3 tbsp soy sauce
    • 🧄 1/2 tbsp minced garlic
    • 🧂 Some salt

Peel the potatoes and grate them using a grater. Avoid using a blender for better texture.

Place a cloth over a bowl and squeeze the grated potatoes to extract the liquid. Save the liquid for later.

Mix the extracted starch with the squeezed potato mixture and add 1 tsp salt. Form into small dumplings.

Prepare the anchovy broth by boiling water with dried anchovies for 10 minutes. Remove the anchovies.

Add the potato dumplings to the broth and cook until they float to the surface.

Slice zucchini, carrot, and green onion. Add them to the broth along with soy sauce, garlic, and salt.

Optionally, add perilla powder for a nutty flavor and serve hot.
