- Assorted fish cakes to taste
- 1 pack udon noodles
- 3-4 sprigs crown daisy
- 🧅 1 handful green onions
- 2 green chilies
Broth Ingredients
- 🐟 15 anchovies for broth
- 1/4 radish for broth
- 🧅 1 stalk green onion for broth
- 🧅 1 onion for broth
- 2 green chilies for broth
- 3-5 pieces kombu for broth
Seasoning
- 🧂 1 cup soy sauce
- 🧄 1 tbsp minced garlic
- 🍬 2 tbsp sugar
- 1 tbsp cooking wine
PASSOS
Prepare the broth ingredients by chopping radish, green onion, onion, and green chilies.
In a pot, add 2 liters of water, anchovies, radish, green onion, onion, and green chilies. Add minced garlic, soy sauce, sugar, and cooking wine.
Bring the broth to a boil and simmer for 10 minutes. Add kombu and simmer for an additional 5-10 minutes.
Strain the broth through a sieve and set aside.
Arrange fish cakes, crown daisy, green onions, and green chilies in a hot pot or shallow pan.
Pour the strained broth into the pot and bring it to a boil.
Add udon noodles and cook until tender. Adjust seasoning if necessary.
Serve hot and optionally sprinkle chili powder for extra spice.
