    • 🧅 1 stalk green onion
    • 1/2 red chili (optional)

  • Seasonings

    • 🍬 1/2 tbsp sugar
    • 1/2 tbsp sesame oil
    • 🧄 1/2 tbsp minced garlic

    • 2–3 tbsp cornstarch
    • 2–3 tbsp cooking oil

Remove the stems of the eggplants and flatten them with a rolling pin. Cut them in half and microwave for 4–5 minutes.

Lightly press the eggplants with the back of a knife and sprinkle 3–4 pinches of salt on both sides for seasoning.

Finely chop the green onion and red chili (optional) and set aside.

Mix ground pork with soy sauce, cooking wine, sugar, sesame oil, and minced garlic in a bowl.

Pat the eggplants dry and coat both sides evenly with cornstarch.

Heat a pan with cooking oil, place the eggplants, and add the pork mixture on top. Cook over medium heat.

Once cooked, garnish with chopped green onion and red chili. Serve with dipping sauce if desired.
