INGREDIENTES

- 🍗 1 whole chicken for braising
- 🥔 2 potatoes, quartered
- 🧅 1 onion, chopped
- 🥕 1/3 carrot, sliced
- 2 handfuls chopped green onions
- 💧 600ml water
- A pinch of sesame seeds
Seasoning
- 2 tbsp red pepper flakes
- 4 tbsp gochujang (Korean chili paste)
- 10 tbsp soy sauce
- 🧄 1 tbsp minced garlic
- 4 tbsp sugar
- 1 tbsp corn syrup
- 1 tsp ginger powder
- 2 tbsp mirin
- A pinch of black pepper
PASSOS
Quarter the potatoes and peel the edges. Chop the onion and carrot into bite-sized pieces. Slice the green onions thinly.
Mix red pepper flakes, gochujang, minced garlic, soy sauce, sugar, corn syrup, mirin, ginger powder, and black pepper to make the seasoning sauce.
Clean the chicken by removing excess fat and rinsing under running water. Optionally, soak in milk for 10-15 minutes.
Blanch the chicken briefly in boiling water, then rinse under cold water.
In a pot, add the chicken, seasoning sauce, and 600ml of water. Bring to a boil, then add the potatoes and simmer for 20-30 minutes.
After 20-30 minutes, add the onion and carrot. Simmer until the vegetables are tender and the sauce thickens.
Add the green onions and sesame seeds as garnish before serving.
