INGREDIENTES
Dough
- 💧 50g water
- 🥛 50g milk
- 🧂 1g salt
- 🍬 5g sugar
- 🧈 40g butter
- 60g flour (can mix with strong flour)
- 🥚 2 eggs (adjust based on consistency)
- 1 tsp vanilla extract (optional)
Filling
- Custard cream (prepared separately)
- 60g matcha ganache milk
- 1 tbsp matcha powder
- 🥛 15g milk
PASSOS
Prepare flour and set it aside near the stove.
In a saucepan, combine butter, salt, sugar, milk, and water. Heat over medium heat until boiling.
Turn off the heat and add flour. Mix until combined.
Return to low-medium heat and stir until a film forms at the bottom of the pan.
Transfer the dough to a bowl and let it cool to prevent eggs from cooking.
Gradually add eggs, mixing until the dough reaches the desired consistency.
Transfer the dough to a piping bag. Preheat the oven to 190°C.
Spray water or wet your hands to smooth out the dough peaks.
Bake in the preheated oven for 22–25 minutes. Do not open the oven immediately after baking.
Prepare ganache by microwaving all ingredients except matcha powder. Stir and add matcha powder.
Fill the choux with custard cream and matcha ganache.
