INGREDIENTES
Meat
- 🥩 800g beef
Vegetables
- 1/2 radish
- 🥕 1 carrot
- 🧅 1/2 green onion
- 🧅 1/2 onion
- 1 hot pepper
Seasoning
- 7 tbsp soy sauce
- 4 tbsp mirin
- 🧄 1 tbsp minced garlic
- 🍬 1 tbsp sugar or syrup
- 💧 250ml water
- a pinch of ginger powder
- a pinch of pepper
PASSOS
Cut the beef into stew-sized pieces and soak in cold water for 30 minutes to remove blood.
Dice or grind the onion and add it to the pot.
Combine all seasoning ingredients and beef in a pot. Add water as needed.
Prepare radish and carrot by cutting them into chunks similar in size to the beef.
Add all ingredients to the pot and heat on high until boiling.
Once boiling, reduce to low heat, cover, and simmer.
Skim off impurities and fat occasionally. Adjust seasoning to taste.
After 1 hour, remove radish and carrot to prevent overcooking.
Continue simmering the beef for another 1–1.5 hours until the broth reduces.
Return radish and carrot to the pot.
If the broth is too reduced, add water. Garnish with green onion and sesame seeds before serving.
