INGREDIENTES
Vegetables
- 🌱 1 pack asparagus
- 🍆 3 small eggplants
Seasonings
- 🧂 1 pinch salt
- 🧂 2 tbsp coarse salt
- 🧄 1 tbsp minced garlic
- 1 tbsp oyster sauce
- 1 tbsp soy sauce
- 🧅 1 handful chopped green onion
- 🌰 1 tbsp sesame seeds
PASSOS
Trim the asparagus ends and peel the tough outer layer using a peeler.
Blanch the asparagus in boiling water with a pinch of salt for 1 minute.
Cut the eggplants into thick or thin slices, as preferred.
Sprinkle coarse salt over the eggplant slices and let them sit for 20 minutes.
Squeeze the salted eggplants gently to remove water, but do not rinse.
Heat a pan on high heat and sauté minced garlic for 1 minute.
Add the eggplants to the pan and stir-fry on high heat.
Add the blanched asparagus and stir-fry quickly to combine.
Add oyster sauce, soy sauce, chopped green onion, and sesame seeds. Stir well to coat.
