Spicy Stir-fried Kiriboshi Daikon

    • 150g sliced pork
  • Vegetables

    • 30g dried daikon
    • 4 stalks chives
    • 2 shiitake mushrooms
  • Oil and Seasoning

    • 1 tbsp sesame oil
    • 1 tsp white sesame seeds
    • 1 tbsp sake
    • 1 tbsp soy sauce
    • 1 tbsp cornstarch
    • 1 tbsp mirin
    • 1 tsp gochujang
    • 🧄 1/2 tsp grated garlic
    • 1/2 tsp grated ginger
    • 50ml water

Rinse the dried daikon lightly and soak it in water for 15 minutes. Squeeze out excess water. Cut chives into 4cm pieces and slice shiitake mushrooms into 5mm slices.

In a bowl, mix the pork with sake, soy sauce, and cornstarch. Massage the mixture into the pork.

In another bowl, combine sake, mirin, soy sauce, gochujang, grated garlic, grated ginger, and water to create the sauce.

Heat sesame oil in a frying pan over medium heat. Add the pork and stir-fry until the color changes. Add the daikon and shiitake mushrooms, and stir-fry until coated with oil.

Pour the sauce into the pan and stir-fry until the liquid is absorbed. Add the chives and stir briefly.

Serve on a plate and sprinkle with white sesame seeds.
