- 🐟 1 fillet sanma (Pacific saury)
Vegetables
- 🥔 2 potatoes (300g), julienned
Seasoning
- 🧂 Pinch of salt and pepper
Cooking Oil
- 2 tbsp salad oil
- 🧈 10g salted butter
Galette Batter
- 💧 1 tbsp water
- 2 tbsp potato starch
- 🧂 Pinch of pepper
- 🧀 1 tbsp grated cheese

Cut the sanma into 1cm slices and season with salt and pepper. Peel and julienne the potatoes.
In a bowl, mix the sanma slices with the galette batter ingredients (water, potato starch, pepper, and grated cheese).
Heat salad oil and butter in a frying pan over medium heat. Divide the mixture into four portions and spread them out without overlapping.
Cook each portion for about 5 minutes, flipping occasionally, until the surface becomes crispy. Serve on a plate and sprinkle with salt and pepper.
