- 🐟 2 fillets of fresh salmon
 - 🍆 2 eggplants
 - 6 shishito peppers
 - 🧂 A pinch of salt and pepper
 - Potato starch as needed
 - 2 tbsp salad oil
 - 2 tbsp salad oil for salmon
 
Aromatic Sauce
- 🧅 1 green onion, minced
 - 1 piece of ginger, minced
 - 🍬 1/2 tbsp sugar
 - 🍶 1 tbsp vinegar
 - 🧂 2 tbsp soy sauce
 - 1 tbsp sesame oil

Cut the salmon into bite-sized pieces, season with salt and pepper, and coat with potato starch.
Trim the eggplants, cut into bite-sized pieces, and mix with 2 tbsp of salad oil in a bowl.
Mince the green onion and ginger. Mix all the aromatic sauce ingredients in a separate bowl.
Heat 2 tbsp of salad oil in a frying pan over medium heat. Add the salmon and cook until golden brown on one side. Flip and cook for another 2-3 minutes until fully cooked, then remove from the pan.
In the same pan, add the eggplants and stir-fry over medium heat until softened. Add the shishito peppers and stir-fry briefly.
Plate the salmon, eggplants, and shishito peppers. Drizzle the aromatic sauce over the top before serving.
