    • 🥚 3 eggs
    • 🥓 80g block bacon
    • 🥔 3 potatoes (450g)
    • 🧅 1/2 onion (100g)
  • Seasonings

    • 1 tsp olive oil
    • 🧂 1/3 tsp salt
    • Pinch of black pepper
    • 4 tbsp mayonnaise
  • Garnish

    • Pinch of chopped parsley

Thinly slice the onion and soak in water for 5 minutes. Drain and squeeze out excess water. Wrap potatoes in damp paper towels and microwave at 600W for 5–7 minutes. Mash the potatoes roughly while hot, then mix with salt and black pepper. Let cool.

Cut the bacon into 1cm wide pieces and halve them.

Boil eggs for 9 minutes, then cool in cold water and peel. Separate 2 eggs into whites and yolks; finely chop the whites. Cut the remaining egg into 8 pieces.

Heat olive oil in a frying pan over medium heat and sauté the bacon until browned.

Mix the mashed potatoes with chopped egg whites, yolks, onion, and mayonnaise. Add the bacon and egg pieces, then mix lightly.

Serve on a plate and garnish with chopped parsley.
