- 120g hanpen
- 🧅 1/2 onion, sliced
- 1/2 pack shimeji mushrooms
- 3 shiitake mushrooms, sliced
- 🧈 10g salted butter
- 🧂 1/4 tsp salt
- Pinch of pepper
- 30g pizza cheese
- Pinch of chopped parsley
White Sauce
- 🧈 20g salted butter
- 3 tbsp all-purpose flour
- 🥛 300ml milk
- 🧂 1/3 tsp salt
- Pinch of pepper

Cut hanpen into bite-sized pieces. Slice onion thinly. Trim and separate shimeji mushrooms. Remove stems and slice shiitake mushrooms.
Heat a frying pan over medium heat, melt butter, and sauté onion until softened. Add shimeji and shiitake mushrooms, cook for 2 minutes, then season with salt and pepper.
For the white sauce, place butter and flour in a microwave-safe container, cover loosely with plastic wrap, and microwave at 600W for 2 minutes. Stir well.
Add 2/3 of the milk to the white sauce mixture, stir, cover loosely, and microwave at 600W for 2 minutes. Stir again, add the remaining milk, and microwave for another 2 minutes. Season with salt and pepper.
Place hanpen and sautéed mushrooms in a heatproof dish. Pour white sauce over them, sprinkle pizza cheese, and bake in a toaster oven for 10 minutes until golden brown. Garnish with parsley.
