Fish
- 🐟 4 fillets horse mackerel (140g)
 - 🧂 Pinch of salt and pepper
 - 🌾 1 tbsp all-purpose flour
 - 1/2 tbsp vegetable oil
 
Sauce
- 1 tbsp mirin
 - 2 tbsp ponzu sauce
 - 🧈 10g salted butter
 - 1/3 tsp grated ginger
 - 🧂 Pinch of pepper

Pat the horse mackerel fillets dry with a paper towel, then season with salt and pepper. Dust with all-purpose flour.
Heat vegetable oil in a frying pan over medium heat. Place the fillets skin-side down and cook until golden brown. Flip and cook for another 2 minutes until fully cooked. Remove from the pan.
Wipe the pan clean with a paper towel. Add all sauce ingredients (mirin, ponzu sauce, butter, grated ginger, and pepper) and bring to a simmer over medium heat.
Plate the cooked fillets and pour the sauce over them.
