재료
Noodles
- 🍜 180g dried udon noodles
Meat
- 🥩 120g sliced beef
Vegetables
- 125g nagaimo (5cm piece)
- 4 shiso leaves
Oil
- 1/2 tbsp sesame oil
Seasoning
- 1/2 tbsp mirin
- 🧂 1/2 tbsp soy sauce
Soup Base
- 3 tbsp concentrated mentsuyu
- 💧 200ml water

Place the nagaimo in a plastic bag and crush it with a rolling pin until finely mashed. Thinly slice the shiso leaves.
In a bowl, mix the mentsuyu and water. Chill the mixture in the refrigerator.
Heat sesame oil in a frying pan over medium heat. Add the beef and stir-fry until the color changes. Add mirin and soy sauce, and stir to combine.
Boil water in a pot and cook the udon noodles according to the package instructions. Rinse under cold water and drain well.
Place the udon noodles in a serving bowl. Top with the mashed nagaimo, cooked beef, and pour the chilled sauce over. Garnish with shiso leaves.
