    • 0.5 tbsp rice wine
    • 2 dashes black pepper
    • 2 tbsp chili oil
  • Batter

    • 4–5 tbsp cornstarch
    • 🥚 3–5 tbsp egg white
    • 2–3 tbsp water

Prepare the eggplant by cutting it into bite-sized pieces. Dice onion, scallion, green chili, red chili, and garlic finely.

Coat the eggplant pieces lightly with 1 tbsp of cornstarch.

Mix cornstarch, egg white, and water to create a batter. Adjust cornstarch quantity based on eggplant size.

Dip the eggplant pieces into the batter and fry until crispy.

Heat chili oil in a pan and sauté garlic until fragrant.
