Stir-fried Cucumber
- 🥒 3 cucumbers
- 🧄 1 tbsp minced garlic
- 🧂 0.5 tbsp salt
- 🍬 1 tsp sugar
- 1 tbsp sesame oil
- 🌰 1 tbsp sesame seeds
PASSI
Wash 3 cucumbers thoroughly. Use spiny cucumbers if available for better taste.
Slice the cucumbers as thinly as possible. A mandoline slicer can be helpful.
Place the sliced cucumbers in a bowl and sprinkle with 0.5 tbsp salt. Let them sit for 10–30 minutes to draw out moisture.
Once the cucumbers are softened, squeeze out as much water as possible. If too salty, rinse briefly and squeeze again.
In a bowl, mix 1 tbsp minced garlic and 1 tbsp sesame oil. If using frozen garlic, heat it gently over low heat.
Add the squeezed cucumbers to the garlic and sesame oil mixture. Stir-fry quickly over high heat.
Add 1 tsp sugar, 0.5 tbsp salt, and 1 tbsp sesame seeds. Adjust seasoning based on the saltiness of the cucumbers.
Transfer to a wide container and let cool in the freezer before storing in the refrigerator.
