    • 1/4 head kimchi
    • 280g spam
    • 🧅 1 onion
    • 1/2 cup chopped green onion
    • 1.5 tbsp gochujang
    • 2 tbsp red pepper powder
    • 🍬 2 tbsp sugar
    • 1 tbsp soy sauce
    • 2 dashes black pepper
    • 1/2 to 1 cup water
    • 1 tbsp sesame oil
    • 1 tbsp sesame seeds
    • 3 tbsp vegetable oil
  • Toppings

    • 🥚 4 eggs
    • Seaweed flakes, as desired
    • Sesame seeds, as desired
    • Parsley, optional

Chop all ingredients finely. Cut 120g of spam into small cubes.

Heat 3 tbsp of vegetable oil in a pan. Stir-fry chopped green onion first, then add onion and finely chopped spam.

Add chopped kimchi and stir-fry until well combined. Then add 1.5 tbsp of gochujang and mix thoroughly.

Add 2 tbsp of red pepper powder and stir-fry. Gradually add water (1/2 to 1 cup) to prevent dryness and cook until thickened.

Add 2 tbsp of sugar and 1 tbsp of soy sauce. Lower heat to medium-low and continue cooking.

After 10-13 minutes of simmering, finish with 1 tbsp of sesame oil and sprinkle 1 tbsp of sesame seeds. Remove from heat.

Pan-fry the cubed spam until crispy. Fry eggs with generous oil until edges are crispy.

Serve rice in a bowl, top with kimchi stir-fry, crispy spam cubes, fried eggs, seaweed flakes, sesame seeds, and parsley.
