- 🍤 10 peeled shrimp
- 1 tsp grated ginger
- 1 tbsp sake
- 🧂 Pinch of salt and pepper
- 1 tbsp all-purpose flour
- Vegetable oil for frying
- 🍋 2 lemon wedges
- Parsley for garnish
Batter
- 🥚 1 egg white
- 🧂 Pinch of salt
- 1 tbsp all-purpose flour
- 1 tbsp potato starch
- 1 tsp vegetable oil
PASSI
In a bowl, mix peeled shrimp, grated ginger, sake, and a pinch of salt and pepper. Massage the mixture into the shrimp.
In another bowl, whisk egg white until stiff peaks form. Add salt, flour, and potato starch, then gently fold in. Add vegetable oil and mix lightly to create the batter.
Coat the shrimp with flour, then dip them into the batter.
Heat vegetable oil in a pot to 170°C (340°F). Fry the shrimp until golden and fluffy. Serve on a plate with lemon wedges and parsley.
