INGREDIENTI
Broth
- 5 cups broth
- Few sheets kelp
- Handful dried anchovies
- 1 green chili
Vegetables
- 1/2 bag bean sprouts
- 🧅 1/2 onion, sliced
- 1/2 stalk green onion, sliced
- 1 red chili, optional
Protein
- 1/2 block tofu, diced
- 🥚 1 egg
Seasoning
- 1 tsp shrimp paste
- 🧄 1 tsp minced garlic
- 1 tsp vinegar
PASSI
Prepare the broth by boiling kelp, dried anchovies, green chili, and water for 5 minutes.
Slice onion and green onion, and rinse bean sprouts.
Strain the broth and add bean sprouts.
Add sliced onion and let it simmer.
Add minced garlic and diced tofu.
Season with shrimp paste and adjust saltiness with shrimp paste liquid or salt.
Add vinegar for depth of flavor.
Serve over rice or separately, garnish with green onion.
Crack an egg into the soup and let it cook with residual heat.
