INGREDIENTI
Meat
- 🍖 2 handfuls pork belly
Liquid
- 💧 Adequate amount of water
Condiments
- 3 tbsp soybean paste
- 🧄 1 tbsp minced garlic
- 1 tbsp red pepper powder
Vegetables
- 🥔 1 potato, diced
- 🧅 1/2 onion, diced
- 🥒 1/2 zucchini, diced
- 1 handful oyster mushrooms
- 🍢 1/2 block tofu, diced
- 🧄 1/2 stalk green onion, sliced
- 2 green chilies, sliced
- 2 red chilies, sliced
PASSI
Place 2 handfuls of pork belly in a pot and turn on the heat.
Add enough water to cover the pork belly and bring to a boil.
Add 2 tbsp of soybean paste and let it simmer.
Prepare vegetables: dice potato, onion, zucchini, tofu, and slice green onion, green chili, and red chili.
Taste the stew and adjust seasoning with 1 more tbsp of soybean paste if needed.
Add diced potato and onion to the stew and let them cook until tender.
Add 1 tbsp minced garlic and let the stew simmer.
Once the potatoes are nearly cooked, add the remaining vegetables (oyster mushrooms, zucchini, green onion, chilies, tofu).
Add 1 tbsp of red pepper powder for color and flavor.
Let the stew simmer thoroughly and serve hot.
