- 2 pieces castella
- 🧀 200g cream cheese
- 🥛 250ml whipping cream
- 🧂 50g sugar
- A pinch of cocoa powder
Coffee Syrup
- 5g instant coffee
- 💧 100ml warm water
- 🧂 15g sugar

Cut the castella into three parts to fit your container. Discard the top layer if desired.
Add sugar to the cream cheese.
Mix the cream cheese and sugar until creamy.
Whip the whipping cream with sugar until soft peaks form.
Gradually fold the whipped cream into the cream cheese mixture in 2–3 batches.
Mix the cream cheese and whipped cream thoroughly.
Prepare the coffee syrup by mixing warm water, instant coffee, and sugar.
Place the cut castella pieces into the container.
Soak the castella with coffee syrup until moist.
Spread the filling evenly over the soaked castella.
Repeat the layering process with another layer of castella, coffee syrup, and filling.
Dust the top layer with cocoa powder.
