INGREDIENTI
Pasta
- 🍝 160g spaghetti
 
Meat
- 🐖 150g thinly sliced pork
 
Vegetables
- 1/2 burdock root (90g), sliced
 - 🧄 1/2 tsp grated garlic
 - 1 tsp sliced chili
 - 🧅 Chopped green onion, as needed
 
Oil
- 1 tbsp salad oil
 
Cooking Liquid
- 2 tbsp pasta cooking water
 
Seasoning
- 1 tbsp sake
 - 🍬 1 tsp sugar
 - 🧂 1 1/2 tbsp soy sauce
 - 1/4 tsp dashi powder
 
PASSI
Scrape the skin off the burdock root with the back of a knife. Cut it in half lengthwise, then slice thinly on a diagonal. Soak in water and drain.
Boil water in a pot, add salt (not listed), burdock, and spaghetti. Cook the spaghetti 1 minute less than the package instructions. Reserve 2 tbsp of the cooking water and drain.
Heat salad oil in a frying pan over medium heat. Add pork, grated garlic, and chili. Stir-fry until the pork is cooked through. Add the seasonings (sake, sugar, soy sauce, dashi powder) and mix well.
Add the spaghetti, burdock, and reserved pasta water to the pan. Stir-fry quickly to combine.
Serve on a plate and garnish with chopped green onion.
