INGREDIENTI

- 🍗 1 whole chicken
- 🧅 2 stalks green onion
- 🧅 1 onion
- 🧄 1 handful garlic cloves
- 🧂 A dash of pepper
- 1/3 cup cooking wine
- 🥔 1 potato
- 1 handful rice cakes
- Chopped chives
- 1 portion of noodles
Spicy Sauce
- 🧄 2 tbsp minced garlic
- 1 tbsp sugar
- 3 tbsp chili powder
- 4-5 tbsp vinegar
- 5 tbsp soy sauce
- 1 tbsp corn syrup
- 5 tbsp water
- 🧅 Chopped green onion
Soy Sauce
- 5 tbsp soy sauce
- 1 tbsp sugar
- 2 tbsp vinegar
- 1 tbsp plum extract
- 🧄 1 tbsp minced garlic
- 5 tbsp water
PASSI
Prepare the chicken by removing excess fat and rinsing thoroughly under running water.
Place the chicken in a pot and add enough water to cover. Add onion, green onion, garlic, pepper, and cooking wine.
Skim off any foam that rises to the surface while boiling. Simmer for 1 hour.
Prepare vegetables: slice potato, chop green onion and chives, and ready the rice cakes.
Prepare noodles by rinsing or lightly blanching them to remove excess starch.
Make the spicy sauce by mixing minced garlic, sugar, chili powder, vinegar, soy sauce, corn syrup, water, and chopped green onion.
Make the soy sauce by combining soy sauce, sugar, vinegar, plum extract, minced garlic, and water.
Strain the broth and season with salt to taste. Add potato, rice cakes, green onion, and chives.
Serve the chicken with the spicy sauce and soy sauce. Add noodles to the remaining broth and cook until tender.
