INGREDIENTI
Vegetables
- 🥒 4 cucumbers
- 🧅 1/2 large onion
Seasonings
- 2 tbsp chopped green onion
- 🧄 1 tbsp minced garlic
- 3 tbsp gochujang (Korean chili paste)
- 3 tbsp chili powder
- 2 tbsp soy sauce
- 3 tbsp vinegar
- 1-2 tbsp sugar
- 1 tbsp corn syrup
- 🧂 1 tbsp coarse salt (for brining)
PASSI
Wash the cucumbers thoroughly, cut them lengthwise, and slice diagonally. Slice the onion into thick strips.
Place the cucumber and onion in a bowl, add 1 tbsp coarse salt, and lightly brine for about 10 minutes. Drain the water using a sieve.
While the cucumbers are brining, prepare the seasoning sauce by mixing gochujang, chili powder, soy sauce, vinegar, sugar, corn syrup, and minced garlic.
Combine the brined cucumbers and onions with the seasoning sauce and mix well.
Serve immediately as a side dish or store in the fridge for 1-2 days to enhance flavors.
