INGREDIENTI
Dip
- 1/2 cup mayonnaise
 - 1/4 cup whole buttermilk
 - 1 tablespoon ranch dressing mix
 
Filling
- 🍗 1 1/2 cups rotisserie chicken
 - 🧀 1 cup Monterey Jack cheese
 - 🌽 1/2 cup frozen corn
 - 1/2 cup canned black beans
 - 1/2 cup baby spinach
 - 1/4 cup red bell pepper
 - 1/4 cup scallions
 - 1 tablespoon pickled jalapeño chile
 - 1 1/2 tablespoons taco seasoning
 - 🧂 1 teaspoon kosher salt
 
Wrapper
- 🌮 8 (8 inch) flour tortillas
 
Cooking
- 2 cups vegetable oil

Mash 1 avocado half and mix with mayonnaise, buttermilk, and ranch dressing mix into a creamy dip. Refrigerate.
Combine chicken, cheese, corn, black beans, spinach, bell pepper, scallions, jalapeño, taco seasoning, and salt in a bowl.
Place 1/2 cup filling in each tortilla. Fold ends, roll tightly, and secure with toothpick.
Heat oil to 350°F. Fry eggrolls 3-4 minutes until golden and crispy. Drain on paper towel.
Remove toothpicks, slice eggrolls, and serve with avocado dip.
