    • 🥑 1/2 avocado
  • Dairy

    • 🧀 20g pizza cheese

    • 2 tbsp all-purpose flour
    • 🥚 1 egg
    • 1/2 cup breadcrumbs
    • As needed salad oil
  • Condiments

    • 2 tbsp ketchup
    • 🧂 1/3 tsp salt
    • Pinch of pepper
    • 1 tbsp mayonnaise

Cut potatoes into small pieces and soak in water to remove excess starch. Cut avocado in half, then dice half into 2cm cubes. Beat the egg in a bowl.

Place potatoes in a microwave-safe container, cover loosely with plastic wrap, and microwave at 600W for 4 minutes.

Mash the microwaved potatoes and the undiced avocado while still hot. Add salt, pepper, mayonnaise, and diced avocado, then mix well.

Divide the mixture into 4 portions. Place 1/4 of the pizza cheese in the center of each portion and shape into balls. Coat each ball in flour, beaten egg, and breadcrumbs sequentially.

Heat salad oil in a pot to 170°C. Fry the croquettes until golden brown, turning occasionally.

Serve on a plate with ketchup on the side.
