Slice the cucumber thinly.

Layer the seafood and vegetables in a mold, then cover with sushi rice. Wrap with plastic wrap and refrigerate for 10 minutes.

Invert the mold onto a cutting board to release the sushi donuts.

Place the shrimp sushi donuts on a baking tray lined with aluminum foil. Drizzle with soy sauce and mayonnaise, then bake in a toaster oven at 250ยฐC for 3-5 minutes until golden.
