Coating
- 3 tbsp potato starch
 
Oil
- Enough salad oil for frying
 
Seasoning
- 1 tbsp sake
 - 1/2 tbsp soy sauce
 - 1/2 tsp grated ginger
 - 1/2 tsp grated garlic
 
LANGKAH
Place squid cartilage in a heatproof container, add boiling water, and let sit for 10 seconds. Drain the water.
In a bowl, mix squid cartilage with sake, soy sauce, ginger paste, and garlic paste. Then coat evenly with potato starch.
Heat salad oil in a pot to 170°C (340°F). Fry the coated squid cartilage for 2–3 minutes until cooked through.
