  • Seasoning

    • ๐Ÿง‚ A pinch of salt and pepper
    • 1 1/2 tbsp soy sauce
    • 1 tbsp mirin
    • ๐Ÿงˆ 10g salted butter
  • Oil

    • 1 tbsp salad oil

Trim the root of shimeji mushrooms and separate them. Slice enoki mushrooms lengthwise and halve them. Separate maitake mushrooms.

Cut chicken into bite-sized pieces and season with salt and pepper.

Heat half of the salad oil in a frying pan over medium heat. Place chicken skin-side down and cook for 2โ€“3 minutes until browned. Flip and push to one side. Add remaining oil and mushrooms to the empty space, stir to coat with oil, cover, and steam for 1 minute.

Remove the lid and stir-fry until mushrooms soften and chicken is fully cooked. Add soy sauce, mirin, and butter, stirring until well combined.
