Quarter the onion.

Place the pork spare ribs in a pot, cover with water, and bring to a boil. Drain and rinse the ribs to remove impurities.

Clean the pot, then add the pork spare ribs, onion, garlic, ginger, spices (โ˜†), and seasonings (โ˜…). Heat over medium heat until boiling, then reduce to low heat and simmer for 2 hours, skimming off any scum occasionally.

Serve in bowls, garnished with spring onion and cilantro.
