- 🧈 50g melted unsalted butter
Filling
- 🧀 220g cream cheese
- 🧂 45g sugar
- 🍠 250g mashed sweet potato
- 🥛 300g heavy whipping cream
- 🧂 30g sugar
- 7g gelatin powder
- 💧 30g water
ÉTAPES
Soak gelatin powder in water and let it bloom.
Crush Oreo cookies after removing the cream filling.
Mix crushed cookies with melted butter and press into the base of a pan. Chill for 10 minutes.
Combine cream cheese and sugar, mixing until smooth.
Mash sweet potato and optionally strain for a smoother texture. Mix with the cream cheese mixture.
Whip heavy cream with sugar until soft peaks form.
Melt bloomed gelatin in the microwave for 10 seconds and mix into the filling.
Fold whipped cream into the filling mixture gently.
Pour the filling into the prepared base and refrigerate for at least 4 hours.
Decorate the surface with crushed sponge cake or almond slices.
