    • 🌰 1 tbsp whole sesame seeds

Remove wilted outer leaves and trim the spinach roots lightly.

Make a cross-shaped incision (+) on the spinach roots and split them slightly.

Wash the spinach thoroughly 3-4 times until no dirt remains.

Boil a large pot of water, add 0.5 tbsp coarse salt, and blanch the spinach for exactly 10 seconds.

Immediately rinse the blanched spinach in cold water to stop the cooking process and drain well.

Squeeze the spinach lightly to remove excess water, leaving about 10% moisture.

In a bowl, mix the spinach with minced green onion, soy sauce, ground sesame seeds, sesame oil, and a pinch of salt. Toss gently.

Let the seasoned spinach sit for 5 minutes to allow the flavors to meld. Adjust seasoning if needed.

Add 1 tbsp whole sesame seeds and 1 tbsp sesame oil, then toss again before serving.
